Quinoa Pilaf with Spinach, Apples and Walnuts


1 1/2 cups uncooked quinoa, rinsed and drained

3 cups vegetable broth

2 T. extra virgin olive oil

3 minced scallions

1/2 c. walnut pieces

10 oz. fresh baby spinach

salt and pepper to taste

1 red variety apple, diced

Bring the broth to a boil in saucepan; add salt and stir in rinsed quinoa,.

Decrease heat, cover and simmer until water is absorbed, about 15-20 minutes, and remove from heat.

While quinoa is in covered pan, heat olive oil in a large skillet over medium heat.

Add scallions and walnuts and cook until fragrant, about 2-3 minutes

Add spinach and season with salt and pepper.

Cover and cook until wilted, about 3-5 minutes

Add diced apple and cook for 5 more minutes

Stir in the cooked quinoa; taste and season as needed.
