Green salads don’t have to be limited in ingredients. There will be plenty of time in late summer for fresh local tomatoes, cucumbers, peppers, and onions. Now is the time to get creative and add whatever suits you both nutritionally and aesthetically.
Here’s an example of a Spring Salad that is filled with flavor and is a feast for the eyes:
salad:
for each plate, mound up your favorite spring greens in the center
garnish with a handful of fresh raspberries, blueberries and small walnut pieces
crumble 1 ounce of fresh feta cheese over the top
Dressing for two salads::
1/4 cup good olive oil
1 tsp. balsamic vinegar
1 tsp. dijon mustard
2 tsp. mayonnaise
juice of 1/2 lemon
salt and freshly ground pepper
any additional seasonings you wish to add
Shake to thoroughly blend
