Vegetarian Chili

Use the basic ingredients and have fun with the spices - you can use what I did or choose some other ones.  Mixing up the spices makes cooking fun and tickles the palate in a different way each time you change it up.

1 small onion, chopped fine

1 clove garlic, chopped fine

1 cup vegetable broth + 1 cup water

1 sweet potato, peeled and diced

2 stalks celery chopped finely

1 can organic black beans, rinsed and drained

1 can organic diced tomato, or fresh chopped

1 cup frozen organic corn

1 tsp. each  turmeric, cumin, coriander

springs of chopped flat Italian parsley

Place 1-2 T olive oil in a stew pot over low heat; add onion, simmer, add garlic, spices and simmer. 

 Raise heat and slowly add 1 c. vegetable broth; add sweet potato and celery; bring to a boil and reduce to a simmer. Continue cooking for 10 minutes. 

Add water, rinsed beans, tomatoes and frozen corn; simmer for 10 minutes more. 

Remove from heat; add chopped parsley and stir.   Serve.
