Using Fennel for Flavor and Health

Do you like licorice? 

If you do, you'll probably like fennel.  Think licorice and celery and a hefty dose of antioxidants. It is related to parsley, carrots, dill and coriander and is a great ingredient in any Mediterranean dish.  When I'm looking for an immune building soup, I include fennel along with mushrooms, onions, ginger and garlic to the soup.  

How do I cut it?

It may be a little intimidating if you're not familiar with fennel, it's pretty easy to cut and prepare for cooking, or eating raw. Check out this you tube video for an easy demo.

Where do I use it?

Fennel can be used in soups, salads and even for a stuffing ingredient. Knowing its beneficial nutrients and interesting flavor I'm experimenting with it in lots of ways. And the fronds?  Save them for a garnish.
