Kicharee

In ayurvedic cuisine, Kicharee is a one dish meal that is light, easy to digest and assimilate. Eating kicharee is a comfort food while detoxifying.

Perfect for a spring cleanse.

Ingredients

3 Tbs Ghee (clarified butter or olive oil)                  1-2 tsp cumin 

1-2 tsp coriander                                                      1-2 tsp fennel

2-4 tbs grated fresh ginger                                     1 cmung beans (also called dal) 

2 c. organic brown Rice                                           pinch of salt

1/2 c. chopped cilantro

Rinse and soak your mung beans the night before you prepare the kicharee. Heat the ghee with the spices and ginger, about 30 seconds. Stir in mug beans and add 4 cups of water. Addrice. Bring to a boil and cook uncovered. Kicharee should be a soup like consistency. Will take about 45 mins to 1 hr.  to cook.

This is the bare bones version for cleansing. Feel free to add vegetables and your favorite spices to jazz it up. Toss in carrots, onion, broccoli. spring peas. 

This recipe makes about 4-5 servings. 

You can have it for all three meals when you are cleansing if you choose.
