Those of us who aim to eat healthy know that vegetables play a vital role. We set a goal to eat at least 5 servings every day at a minimum. The problem is life can quickly get in the way.
That's why I recommend you start your day with some vegetables. They are not just for dinner.
Here's a simple recipe that will get you off to a great start:
EGG and VEGETABLE MEDLEY
3 mushroom caps, chopped
1/2 small yellow onion, chopped, or 2 scallions chopped
1 small tomato, chopped
1-2 handful of kale or spinach, chopped
Place a small amount of olive oil in a skillet or use a non stick grill, Lay the onions and mushrooms over the oil and cook at a low temperature, adding sea salt and pepper. As they cook down, add the green vegetable, cook for a few minutes more and then add the tomato.
Meanwhile crack the egg and whisk it until fully blended. Add a small pat of butter to the pan and pour the egg over it. Cook until done and slide the egg and vegetables onto a plate and serve.
Another variation is to place the vegetable sin a ramekin and pour egg over them, baking at 325 degrees for 10 minutes.
