Corn Salad

Corn salad makes the best summer dish for picnics, cookouts and at the dinner table.

4 c. fresh or frozen corn, rinsed and drained if frozen, and steamed, boiled, or grilled if fresh

1 c. cherry tomatoes, halved

1/3 c. crumbled feta

1/4 red onion, finely chopped

1/4 c. fresh basil, thinly sliced

3 tbsp. extra-virgin olive oil

Juice of 1 lime

Kosher salt

Freshly ground black pepper

toss all ingredients and season with salt and pepper
