Spring Pea Salad

Spring peas ar much more than a starch!

Fresh green peas are a naturally sweet and delicious addition to any spring meal. They are a good source of vitamins K and C, manganese and fiber, and may help promote bone, cardiovascular and gastrointestinal health.

Blanch 1  lb. green peas

1/2  cup  fresh mint leaves, torn 

1  TBSP.  capers

1 shallot, thinly sliced 

1  teaspoon  grated lemon zest 

1/4  cup  extra-virgin olive oil 

1/8  tsp.  sea salt                                  1/4 tsp. ground pepper

1/2  cup crumbled goat or gorgonzola cheese 

  1. In a medium bowl, prepare dressing by combining the mint, capers, shallot, zest, oil, salt, and pepper. 
  2. Add the peas and cheese and toss gently. Serve at room temperature.

Serves 4.
