Are you beginning to 'spring forth' like all the flowers and trees?  Spring is a time of renewal and rapid growth, sometimes stretching us to the limit in our eagerness to get moving again now that winter is behind us.   If you're finding your schedule is revved up to the max, stop for a moment and take in the beauty that is all around us, and you're sure to feel better.

    ------------------Nutrition Focus---------------------
Locavore - a new word in Merriam Webster dictionary.  Its definition?  It is part of the concept of local purchasing and local economies, a preference to buy locally produced goods and services. Those who prefer to eat locally grown and produced food sometimes call themselves "localvores" or locavores. Interest in this way of eating is growing now for many reasons, not the least of which is the freshness and quality of food that is grown locally. A head of lettuce pulled from your local farmer's plot early yesterday has to be tastier and more alive than something that sat on a truck for 4 or 5 days.  When we eat food that is most alive, we receive the most nutrients, so it makes good sense to seek out locally grown. Organic is even better, and now there are a number of ways to tap into organic fruits and vegetables. You can grow them yourself, or you can join a Community Supported Agricultural Farm that is certified organic, or you can purchase them at a Farmer's Market or even in the grocery store. -----Recipe of the Month---------------
Cabbage contains the compound indoles, and is being studied for its effect on reducing breast cancer. Indoles stimulate enzyme systems that break down estrogen into less potent forms. Here's a great use of cabbage:
                        Spicy Coleslaw
1 small head shredded green cabbage                3 peeled and shredded carrots
6-10 shredded radishes                                       1/4 c. finely chopped parsley
2 T. fresh chopped dill
Dressing:  3/4 c. orange juice, 2 T. dijon mustard, 1 T. grated horseradish root, 2 T. minced red onion, 1 T. fresh lemon juice, 1 t. pure maple syrup, 2 T. olive oil, 1/2 t. salt
Combine slaw ingredients, mixing gently.  Combine ingredients for dressing in a food processor, blending thoroughly. Pour over salad and stir to combine.  This dressing replaces calorie laden mayonnaise for a healthier nd tastier choice.
