Recipe of the Month: Cold-Tossed Broccoli from “China Express” by -Nina Simond
This is a nice recipe to prepare early in the day before it gets hot; then refrigerate until dinner time. I substituted tamari for soy sauce as tamari is lower in sodium. You could also use Bragg's liquid aminos which has even less sodium. I also replaced refined sugar with honey. Broccoli has strong anti-cancer properties.
1 Bunch Of Broccoli (about 1 pound)
¼ cup tamari sauce
1 tbls. honey
2 tbls. Clear rice vinegar
2 tbls. Sesame oil
1 tbls. Minced fresh ginger
1 tbls. Minced garlic
¾ tsp. chile pepper flakes
Peel tough skin from the broccoli stalks. Cut off florets into small pieces. Cut stalks on the diagonal into 1 inch pieces. Heat large pot of water until boiling. Add broccoli and boil for about 3 minutes, or until tender. Drain in colander, and refresh under cold running water to keep bright green color. Drain and place in bowl.
Combine tamari, honey, and rice vinegar in a small bowl and stir to dissolve honey.
Heat a wok until hot, add sesame oil, heat until hot. Add ginger, garlic and chile pepper flakes. Stir fry for about 10 seconds. Add tamari mixture, stir fry (constant stirring) for 30 seconds. Pour over broccoli and toss to coat.
Before serving--Let sit at room temperature for 30 minutes or chill for several hours in refrigerator.
