Sweet Vegetable and Millet Soup

1/2 cup millet 4 cups water 4 carrots 2 parsnips 2 shallots 1 tablespoon canola oil 1/2 teaspoon sea salt
Chop the vegetables into bite size chunks.
- Oil the bottom of your soup pot and sauté the vegetables for about 10 minutes with a pinch of salt.
- Wash the millet well and add it to the pot.
- Stir and continue to sauté 5 more minutes.
- Add the water, salt and seasonings of your choice
- Bring to a boil, then turn the heat down and cook on medium-low heat for about 20 minutes or until the millet and vegetables are soft.
- Garnish with fresh parsley or scallions, finely chopped.
