Featured Kale Recipe: Baked Eggs
These adorable baked eggs are an ideal fast breakfast for those busy school mornings and are easy to prepare ahead of time. Make them portable for breakfast on the go, simply scoop them out of the ramekins or coffee mug that you made them in, and place them in a covered pyrex dish. !
- Non-stick cooking spray
- 3 eggs
- 1 cup finely chopped kale
- 1/8 teaspoon baking powder
- 2 tablespoons tomato salsa
Coat two ramekins or coffee mugs with cooking spray. Preheat oven to 400 degrees Fahrenheit. Place eggs, kale and baking powder in a medium bowl and whisk well. Divide into two ramekins or coffee mugs. Bake 15-18 minutes, until the eggs puff and are cooked thoroughly. Top with tomato salsa and enjoy. Serves 2.
